Creative Appetiser
Spheres of osmosed melon with volcanic Malvasía. Duck breast crumble smoked with heather coal. Crystal bread and island mango mayonnaise. Coriander sprouts. An entrance that opens the door to the territory.
Seven Cheese Soup
Soup of seven cheeses. Iberian ham crumble. La Santa shrimp tartare smoked with roasted coffee butter and leek with coffee aroma. The milky memory of the islands told in a contemporary version.
